Somali Cuisine: Presented by Mulki Ali

Somali ‘Bariis’ Rice


6 cups Basmati Rice
8 cups boiling water
1 tsp ground Cardamom
1/2 tsp Xawaash
4 garlic cloves minced
2 tbsp vegetable seasoning
3 cinnamon stick
2 diced onions
2.5 cups cilantro
1/3 cup vegetable or olive oil

Somali Chicken Suqaar


2 pound boneless chicken breast
1/4 vegetable oil
1 onion sliced
1 potato cut
1 carrot cut
1 tsp spice mix
1 tsp salt
1 green pepper whole
1/3 cup water
